Southwestern-Style Beans and Rice

Ingredients (Yield: 2 servings)

1/2 cup uncooked white or brown rice

1 can black beans, drained and rinsed.

Oil

1/2 of an onion

1 tsp minced garlic

Spices! I used salt, pepper, ground cayenne powder, and a Southwest Chipotle blend. You can use whatever you want.

Instructions

Step 1: Cook rice per package instructions.

Step 2: Finely dice your onions. The size of your pieces are up to you, I try to get mine about the size of the beans I’ll be cooking.

Step 3: Heat up 1 tbsp oil in a large frying pan on medium heat. Saute onions until wilted and beginning to brown.

Step 4: Add your garlic and other spices to the onions, and cook 1 minute more.

Step 5: Add your beans to the frying pan. Stir and continue to cook on medium heat for about 3-5 minutes more. The beans will start to get just a little bit creamy and the extra liquid will condense.

Step 6: You can either mix the beans and rice, or serve separately. Enjoy!
