Roasted Chickpea Bites

Ingredients (Yield: 3 servings)

1 can of chickpeas

1 tablespoon of olive oil

1/2 teaspoon of salt

Paprika for color

Instructions

Step 0.5: Preheat your oven to 350F. Line a cookie sheet with aluminum foil.

Step 1: Drain your chickpeas and rinse them in cold water.

Step 2: Spread your rinsed chickpeas onto a clean kitchen towel. Using a second towel, gently rub and roll the chickpeas to try and remove as much moisture as you can. The little skins on the chickpeas may start to come off. You can pull them out as you go, though it’s not necessary.

Step 3: Place your chickpeas into a bowl with your oil, salt, and paprika. Stir with a spoon until the chickpeas are well-coated in the oil mixture. Spread your chickpeas on your cookie sheet in a single layer.

Step 5: Bake for 40-50 minutes. After 20 minutes, give the cookie sheet a shake to roll the chickpeas around a little.

Step 6: Cool slightly or all the way before eating. These will get slightly crunchier as they cool.
