Ingredients (Yield: 3-4 servings)
2 cups of any medium sized pasta, (I'm using Gemelli)
About 3oz of spinach, 1/2 of a bag
1/4 cup of milk
1/4 cup of cream cheese
1/4 cup of pepper jack cheese, either shredded or cut into cubes
Step 1: Cook your pasta per package instructions.
Step 2: Cook your spinach in a pan over medium-low heat with a small splash of water until it's shrunken and wilted.
Step 3: Allow your spinach to cool slightly, then place your cooked spinach into a blender and puree until smooth. If you're using a blender like mine that seals completely, make sure you read my blender safety tips at the top of the page.
Step 4: Place your spinach puree back into your pan with salt and pepper, other spices if you want, your cheese, and your cream cheese. Stir on low heat until it has melted, but try not to let it bubble.
Step 5: When your sauce is smooth and all the cheeses are melted, pour your sauce over your pasta. Serve hot. This sauce is gorgeous and green!
