Peanut Butter Cereal Bars

Originally posted, 2/25/16

Ingredients

Cooking Spray

1/2 cup peanut butter

1/2 cup honey

3 cups TOTAL of any of the following:

Cheerios

Chex

Rice Crispies

Oats (old-fashioned style oats, not instant oatmeal)

Instructions

Step 1: Measure out peanut butter and honey into your pot. I find it works best if you spray the measuring cup with just a little cooking spray, the honey and peanut butter don’t stick as badly.

Step 1.5: Spray your casserole dish or cookie sheet with cooking spray. Alternatively, line the dish with aluminum foil or parchment before spraying for easier clean up.

Step 2. Heat up the peanut butter and honey on medium/low heat, stirring frequently.

Step 3: Once the mixture begins to bubble, it is ready. Remove the pot from the heat, pour in the 3 cups of cereal. I usually use 2 1/2 cups of cheerios and 1/2 cup of oats. Usually some mix of large and small cereals works best. Stir gently until the cereal is fully coated in the peanut butter.

Step 4: Spread the cereal into the casserole dish and gently press down with your spatula/spoon until the cereal is in an even layer.

Step 5: Allow cereal bars to cool. You can stick them in the fridge or leave them on the counter. If you leave them out, it would be a good idea to cover them with a towel to keep bugs/dirt/people from touching them.

Step 6: To store, keep them in a covered container and put them in a cool, dry place. Enjoy!
