Cookies 'n' Cream "Kairos" Cookies

These cookies are insanely good! Sweet, vanilla and chocolate, and so easy to make. Wondering what the secret ingredient is? Vanilla pudding mix. It gives the cookies a soft, cakey texture. Combined with slightly crunchy oreo cookies and melty chocolate chips, these cookies are to DIE for!

I once made these cookies for my high school senior retreat: a kairos retreat. The cookies were a big hit with the girls, so when when the guys went on their kairos a few months later, I made a HUGE batch of cookies for them to share.

So now, the LHS class of 2015 knows these cookies as “Kairos” cookies. The name has stuck.

Ingredients

2 sticks of butter, softened

1/2 cup of brown sugar

1/2 cup of white sugar

2 eggs

1 teaspoon of vanilla extract

One 3.4 oz packet of vanilla pudding mix (or a little more than 1/2 of a 5oz packet)

1 teaspoon of baking soda

2 and 1/2 cups of flour

2 Hershey bars, broken up OR 1/2 cup of chocolate chips, any variety

10-14 Oreo cookies

Instructions

Step 0.5: Preheat oven to 350F. Line a cookie sheet with aluminum foil or parchment paper.

Step 1: Cream the butter and sugars together until they form a paste. Add in your eggs, vanilla extract, pudding mix, and baking soda, and mix well. Add the flour and stir to combine.

Step 2: Sprinkle in your broken up Hershey bars or chocolate chips and stir to combine. Break up the oreos 3 or 4 at a time and stir them in. Be careful not to pulverize them, you just need to mix them into the dough.

Step 3: Using two spoons, drop spoonfuls of cookie dough onto your cookie sheet.

Step 4: Bake for 8-10 minutes, or until slightly golden at the edges. They might not appear done, but they will set as they cool.

Step 5: Allow cookies to cool slightly or all the way before eating them. Store in an airtight container up to two weeks.
